This is another favorite of mine that my mom used to make. She wrote the recipe down while I was on college and when I mak this for my husband and step-daughters, I have had to quadruple the recipe. Plus, we like the leftovers for lunches. This is really filling and good with a side salad. If you have kids and they like pizza, they will like this.
Ingredients
1 package of italian pork sausage
1/2 to 3/4 cup diced onion
1 package sliced mushrooms
1 jar of spaghetti sauce or marinara sauce
4 eggs
2 cups flour
2 cups milk
4 tablespoons oil
2 tsp salt
Shredded mozzarella cheese
grated parmesan cheese
Preheat oven to 400 degrees
In a large saute pan add a couple swirls of olive oil, and begin to caramelize the onions and mushrooms, about 5-7 minutes. Add the pork and break it up to brown. Brown the pork until cooked through.
While the meat is browning, I mix together the "crust." Whisk together the egg, flour, milk, oil, and salt. You should end up with a batter that looks similar to pancake batter. Don't worry, it won't taste like pancakes!
Spray a 9 x 13 glass baking dish with Pam, add the sausage mixture. Sprinkle a good amount of the shredded mozzarella cheese and then pour the batter over the top of the cheese. Shake the baking dish a little so the batter distributes evenly. Sprinkle the grated parmesan cheese on top.
Bake at 400 for 30-40 minutes until the crust has bubbled up and is golden brown on top.
let cool, cut into squares and serve.
